Plump orange mussels from the coast of Galicia are a favorite in tapas bars and restaurants across Spain.
Freshly harvested mussels are lightly fried in olive oil and covered with a vinegar and paprika marinade that adds a little zing to their flavor. Serve as a tapa with salted chips and cold white wine.
