This tuna belly pate is ideal for preparing appetizers. Its name, ventresca, refers to the part of the tuna where it is located, the belly area of the tuna.
The peculiar characteristics of the ventresca that give it its reputation of delicacy are: its proportion of fat, which gives it a much more intense, fine and delicate flavor than the rest of the fish, its gelatinous texture meat, and its lamination.
